Sperello, vin santo of the Berioli winery, is still produced following ancient techniques of the Trasimeno rural tradition. The grapes of Trebbiano and Malvasia, from which this vin santo is made, grow in well exposed vineyards, allowing an early ripening of the grapes. The grapes are harvested in early August, carefully chosen and selected, and stored to dry. Grapes are monitored monthly until the sugar residue arrives at the optimal level. On the first sunny days in early December, the grapes are hand-pressed. The so obtained must is left to its fermenting process in small durmast barrels. Sperello is still hand-bottled after natural filtration, offering a broad-spectrum of the typical flavours of a traditional vinsanto.
